Fresh Pumpkin Soup

  • Pumpkin Peeled
  • Red Onion Chopped 200gm
  • Garlic Chopped 75gm
  • Leeks Chopped 150gm
  • Celery Root Chopped 200gm
  • Water 3 Ltr
  • Salt
  • White Pepper
  • Aromat
  • Coriander
  • Soyabean Oil

Roast 3 Kg Pumpkin For 30 Minutes In The Oven,Temperature Of 170 Degree For 30 Minutes.To A Pot Add Oil,chopped Garlic,chopped Onion And Cook Until Golden Brown To This Add Celery And Leeks (10 Mm) Chopped.

Then Put 5 Litres Of Water And The The Roasted Pumpkin To The Same Pot And Boil For An Hour. Add Some Salt,aromat And Pepper To Taste.

Remove It From The Flame And Blend It Into A Puree And Strain, After Straining Mix Some Fresh Cream...

Garnish It With Chopped Coriander
